No Added Sugar Banana Muffins for Baby

B.G. is at the age where she wants solid food whenever we’re eating.

She hates to miss out on anything! Doing some meal prepping has helped a ton. These no added sugar baby banana muffins are perfect—they’re reasonably healthy, tasty (I enjoy them too!), and easy to fit in a small container to take along with you. 

**Note** Before giving baby a muffin like this, make sure to give them the individual ingredients in order to test for allergies. 

Ingredients: 

  • 1 cup all-purpose flour

  • ½ cup rolled oats

  • 1 tbsp cinnamon

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • 2 medium very ripe bananas 

  • ½ cup whole milk plain yogurt

  • ¼ cup unsalted butter (melted and slightly cooled)

  • 2 eggs 

  • 1 teaspoon pure vanilla extract

Steps:

  1. Preheat oven to 375 degrees F. Prepare muffin tin.

  2. Mix together flour, oats, cinnamon, baking soda, and salt. Set aside.

  3. In a separate bowl, mash up bananas. Add milk, yogurt, melted butter, and vanilla.

  4. Beat eggs and add them to banana mixture. 

  5. Combine all ingredients. Spoon into muffin tins. 

  6. Bake for 10-12 minutes for mini-muffins or 14-16 minutes for standard-size muffins. Let cool and enjoy.

Tips:

  1. I love the mini-muffins for B.G! They’re the perfect size for her practice taking bites and are okay if the whole thing ends up in her mouth.

  2. Experiment with the recipe! They’re great with chocolate chips added (not for baby, though!). Nuts, shredded coconut, or shredded zucchini would also be tasty. 

  3. For an even healthier version, use ½ cup whole wheat flour and ½ cup all purpose.

  4. Top with butter, peanut butter, jam, etc.

  5. Feel free to reduce the cinnamon. I love cinnamon so I tend to use a lot!

  6. Make a large batch and refrigerate for 3-4 days or freeze for 3-4 months.
