Happy National Nacho Day! Who doesn’t love nachos? They’re versatile, make for an easy dinner, and so, so, so yummy.
Choose Your Toppings
What’s your favorite nacho topping? I’m vegetarian, so we typically have beans, peppers, onions, cheese (lots of it!), salsa, and avocado. Sometimes sour cream (especially if my husband got the hot salsa), and veggie-based chorizo. (If you’ve never had that, think veggie burger-style chorizo.)
Add black beans for fiber, magnesium, and to bulk up vegetarian nachos.
But there’s so many other toppings you can put on nachos. Olives, lettuce, tomatoes, beef, chicken, queso dip, guacamole, corn…like I said, you can really make nachos versatile!

Do a Clean-Out the Fridge Nacho Night.
If you’re serving for a crowd (or a few picky eaters), make a nacho bar and people can load up their plates how they want.
Easy Dinner
If you need an easy dinner, nachos are great. Toss some shredded cheese over a baking sheet of tortilla chips, bake it in the oven at 350 degrees for 10 minutes or until the cheese is as melty as you would like, open a jar of salsa, and you’ve got dinner. Of course, for some added nutrition, taste, and to make it more filling, add some beans and veggies (and maybe meat). But if you’re short on time or spoons, chips and cheese will fill you up.
Tips:
Keep your toppings separate and use the leftovers to make burritos or a taco salad.
Experiment with different types of tortilla chips: plain, blue corn chips, hint of lime, seasoned. There’s healthy varieties, like grain-free chips, baked chips, and chips made with avocado oil. You could even try your hand at making your own!
Likewise, experiment with salsa varieties. Of course, you can get different spice levels, but also consider mango or pineapple salsa, salsa verde, or even pico de gallo. Homemade salsa is also quite easy.
However you make them, go make and enjoy your nachos!
